2021 McCarthy Chardonnay
An endearing Chardonnay with salted toffee, apricot, and crisp acidity.
This second vintage of our Matriarch Series Chardonnay is crafted from Dijon and Entav selections with notions of toasted brioche and lemon curd.
Nuanced with savory richness, tension, and an elegant lengthy finish, this is an enchanting addition to Fairsing's Chardonnay program.
Vintage
The 2021 growing season was 8% warmer than normal, however temperaturesin the critical months of fruit development are ripening were normal to slightly below average.
Althought the Willamette Valley experienced record-breaking heat in late June, we received rain just prior to the heat event which hydrated the vines and prevented damage.
Budbreak occurred in the third week of April and bloom began on June 4. Veraison was observed on August 12 with harvest for our McCarthy Chardonnay on September 9.
Harvest
After 100 days of drought, a welcome and rejuvenating rain arrived September 18, one day after harvest of the full vineyard was complete.
Elevage
This combination for this combination of Dijon 95, Entav 548, and Dijon 76 selections was fermented 11 months in 27% new French oak to an alcohol of 13.6%.
This Matriarch Series Chardonnay was bottled August 24, 2022.
